Lowering Cholesterol Through Diet in Jordan: What the Evidence Actually Says

April 20, 2026 · 7 min read · by Rula Abu Ghazaleh

High LDL cholesterol is one of the most common lab findings I see in Amman. The advice patients arrive with is usually decades out of date — starting with 'stop eating eggs.'

Saturated fat is the bigger lever, not dietary cholesterol. Reducing butter, ghee, fatty red meat, and full-fat dairy moves LDL far more than avoiding eggs does.

Add, don't just subtract. Soluble fiber (oats, barley, legumes, apples, psyllium), plant sterols, nuts (30g/day), and olive oil actively lower LDL.

The Mediterranean pattern wins. Vegetables, legumes, whole grains, fish 2–3x/week, olive oil as primary fat, moderate dairy, limited red meat. This isn't a fad — it's the pattern with the strongest cardiovascular outcomes data.

Diet alone may not be enough. Genetic hypercholesterolemia responds partially to diet but usually needs medication. A dietitian working with your cardiologist is the right team.
